Today is National Peach Cobbler Day and I decided to share this generic recipe for fruit cobbler that can be used with any type of fruit. It is simple and easy, and quick to throw together.

(The cobbler in the picture is one I made from wild black raspberries picked here on the farm.)

Ingredients

2 cups all-purpose flour
1 1/2 cups sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1/2 stick butter or margarine
3 to 4 cups raw fruit sweetened to taste

Instructions

Melt butter/margarine in a 9×13 pan.
Mix all ingredients except fruit, together, and pour half into the pan.
Add fruit and top with rest of batter.
Bake at 350* for 45 minutes.
Serve hot or cold with topping of your choice. (I like a scoop of a good vanilla ice cream)

Cooks note: Try substituting canned fruit for the raw fruit.

This one is so simple and easy. You can eat it just as is, home-style with milk and sugar, or with a big scoop of vanilla ice cream. It is good hot or cold!!

This is very similar to my mother’s recipe. Excellent! I’m going to wait until someone is here before I make a cobbler. It would be too tempting if I were in the house alone with it.

Yes they are a rarity! I don’t think I have seen them in a store in my entire lifetime. The wild ones grow and do really well here.
