I’m not overly fond of pumpkin!
I don’t like the flavor, consistency, or much of anything else about it!!

However, for some reason, it is an unavoidable part of Thanksgiving dinner!

A few years back, I found this recipe which is a happy compromise. I make it every year.

Ingredients:

Crust

1 yellow cake mix (divide and reserve 1 cup)
1 egg
1/2 cup melted butter

Combine and press into bottom of greased 9×13 inch pan.

Filling

1 (1 lb 14 oz) can pumpkin pie mix.
2 eggs
2/3 cup evaporated milk

Beat eggs thoroughly. Add pumpkin mix and milk. Blend well and pour over crust.

Topping

1 cup cake mix (previously reserved)
1/4 cup sugar
1 teaspoon cinnamon
1/4 cup butter.

Blend well and sprinkle over pumpkin.
Bake at 350° for 45 to 50 minutes.
Chill and serve with whipped cream (or other whipped topping).

    I’m with you as pumpkin is not my favorite either. Every once in a while, but definitely not the pie.

      I use it mostly just as a filler ingredient in dishes. It makes a nice rich moistness in cookies.

      Just ordinary pumpkin pie has a horrible texture IMHO!!!

    Looks good in the photo and reminds me of carrot cake, which I really like. Eating pumpkins in any form is rare in England, so we are unlikely to see any cakes made with it.

      Carrot cake is one of my family’s favorite desserts.
      Interesting to hear the fact that England isn’t big on growing pumpkins. I would never have guessed. They are a great money crop here, especially around Halloween.

    Bruce hates the texture of mashed cooked winter squash and cooked sweet potatoes. No pumpkin pies or sweet potato pies for him! He does enjoy the puree mixed in with something like pancakes or muffins. The taste is fine to him.

      That’s what is so nice about this. The cake gives it a whole different texture. I don’t like cooked pumpkin either.
