Good Morning World!

Monday, June 1, 2026! A brand new month!
I love new beginnings and today I am blessed with two of them!

Mondays are busy days for me and I need an energy boost. Today for breakfast, I am making Baked Oatmeal!

I find this to be a great alternative to the bland, boring, gooey glomp in your morning cereal bowl.

If you haven’t had oatmeal this way, give it a try and let me know how you liked it. I got the recipe years ago from a fellow West Virginian on another site.

    I am learning a lot from you Vero. I had never heard of baked oatmeal before. It sounds yummy. I usually just eat oatmeal with fruit on top. Once in awhile I will eat it with cinnamon and sugar. It is a quick and easy breakfast for me. As one who does not like to cook it works for me. This recipe might could be one for me to try in the winter though.

    I used to make a delicious baked oatmeal using steel cut oats and blueberries! It was more like a baked good than a cereal and I had to restrain myself from eating a whole pan in one sitting!

      Thank you Kim. That does sound awesome. I may give it a try too. I think I have some old-fashioned oats on hand.

    It sounds interesting, but I would not want to wait that long for breakfast! I love oatmeal, but I eat the old fashioned type, not the quick oats. They do not take that long and taste creamy, not gooey. I use brown sugar (just 1-2 teaspoons) and add fresh blueberries and/or fresh strawberries.

      What a coincidence!! I couldn’t wait either, so while I was making French toast for my grandson, I made a couple of slices for myself. Oats tomorrow!

      I haven’t had rice pudding in ages. What flavor do you make yours? Just vanilla, or do you go spicey?

        I don’t care much for oatmeal in any form, but this one is at least bearable. I would like to be able to eat more oats because they are so healthy for you. I can’t even stand them in meat loaf. So icky sticky!!

          Yum! I remember that from grade school days, ….only it was raisins and RICE! One of our cook’s staple dishes.
