I’m not overly fond of pumpkin!
I don’t like the flavor, consistency, or much of anything else about it!!

However, for some reason, it is an unavoidable part of Thanksgiving dinner!

A few years back, I found this recipe which is a happy compromise. I make it every year.

Not my photo. I will replace it as soon as I take one.

Ingredients:

Crust

1 yellow cake mix (divide and reserve 1 cup)
1 egg
1/2 cup melted butter

Combine and press into bottom of greased 9×13 inch pan.

Filling

1 (1 lb 14 oz) can pumpkin pie mix.
2 eggs
2/3 cup evaporated milk

Beat eggs thoroughly. Add pumpkin mix and milk. Blend well and pour over crust.

Topping

1 cup cake mix (previously reserved)
1/4 cup sugar
1 teaspoon cinnamon
1/4 cup butter.

Blend well and sprinkle over pumpkin.
Bake at 350° for 45 to 50 minutes.
Chill and serve with whipped cream (or other whipped topping).

      It really is. My granddaughter is an aide at school and she made this with her class. A little autistic boy who doesn’t like much of anything, ate two slices.

    This sounds delicious. I have a pumpkin pie in the oven right now. I gave Lise the choice of a dinner or a pie for tonight. I don’t know whether she let her friends vote or not.

    I like some pumpkin things and I would like this. I love pumpkin cake but not the cake roll with cream cheese in it. That gets gummy after a while. Pumpkin bread is good too. The pies are ok with it’s made with a homemade crust. Commercial crusts are thick and tasteless.

      I agree with you on most of that. Keeping the pumpkin roll refrigerated is the secret to making it more enjoyable.

        Aside from getting gummy, my problem is that I’m not a big fan of cream cheese and it has a lot of it.

            It’s a GI issue. I can eat a little but cheesecake will send me flying to the bathroom. After years of that you get to not enjoy it.
